There are 2-types of sweet potato one with yellowish-white flesh that is dry and mealy and is sometimes misnamed as yam. The other form has orange flesh that is softer and sweeter with high moisture content and is more commonly cultivated. Sweet potatoes are not related to common potato.

The Cuban Sweet Potato
Boniato
This small reddish sweet potato has a slightly sweet cream / white-coloured flesh at a fluffy consistency and is commonly used in the Cuban cuisine. It can be baked, boiled, roasted or fried and can be cooked with the skin on or off.

Cultivar
'Beauregard'
This variety produces an orange coloured tuber and accounts for 95% of Australian production. It has heart-shaped leaves and it should be spaced 300 mm (1 ft) apart in rows when planting out.
